On the demand side, crops, meat, and fish are used for direct human consumption (FDEM), animal feed (FEDEM), industrial uses, e.g. biofuels (INDEM), and food processing and manufacturing (FMDEM). The model also accounts for lost production (such as spoilage in the fields, the first stages of the food supply chain), distribution and transformation losses, and consumption losses, which are responsive to average income (and which the user can control in scenarios). Total demand (AGDEM) is the sum of these five use categories. With respect to food demand, it is driven by demand on a daily per capita basis for calories (CLPC) and protein (PROTEINPC) for each food category, namely crops, meat, and fish.
